Banana Cake

I tried cooking a banana cake today. I was craving for a sweet yet healthy cake so I decided to make a banana cake. I'm sure you would want to try this out when you want a healthy treat to satisfy your cravings. It is always nice to have this recipe around as it is really easy to prepare and the ingredients are very much available in your pantry.

Ingredients:

125g salted butter
1 1/2 cups sugar
1/2 tsp vanilla extract
2 eggs
6 pcs of ripe banana
1/3 cup evaporated milk
1 1/2 cups all purpose flour
1/2 tsp baking soda
1/2 tsp iodized salt

Cream Cheese Icing

 90g cream cheese, softened
45g butter, softened
1 2/3 cups icing sugar
1 1/2 teaspoons lemon juice

1. Preheat oven to 175 Celsius. Line 2 loaf bread pan with wax paper to remove it easily from the pan.

2. Cream the butter and sugar until light and fluffy. It is best to use butter at room temperature. Add egg one at a time. Mix in mashed banana and milk. Mix just until well-blended.

3. Sift all the dry ingredients together. Add flour mixture to the butter mixture. Mix just until combined. Pour batter into prepared pan.

4. Bake for 50-60 minutes. Test with a knife or a toothpick. f it comes out clean, then it's done.

5. Cool on a wirerack.

6. To make the cream cheese icing, beat the softened cream cheese and butter with an electric mixer. Beat until creamy then add icing sugar. You can choose to serve a slice of the banana cake dabbed with cream cheese icing or you can spread the icing on the cake before slicing.
